Chef Joseph Hughes was the executive Chef and co-creator of two 5 star restaurants in the Niagara Region; Green Bean Café and MIDE Bistro. During his proprietorship, Joseph created various recipes that exuded nutritional excellence that was recognized by Health Canada, and are reflected in the cookbook "Food is our Medicine, Making it Sacred".
Joseph extended his knowledge to develop a food and health nutrition course for Ridley College, and has taught internationally with the United Nations. His roots entail an intensive five year apprenticeship as a master butcher, various roles in the Food Industry ( production, service and management), a Provincial meat Inspector, and Federal government CFIA Inspector. Joseph's extensive experience have increased his insight into today's concerns of nutrition, food safety and security; all of which feed his passion to education others.
Chef Joseph truly enjoys his new role and the interaction with the traveling public. During evening meals, he can often be found conversing with guests about his past and the nutritional makeup of the evening dinner.
